Zanolli Ovens and Machines is the official technical partner of all the major Italian training schools: Cast Alimenti (Rezzato, BS),Campus Etoile Academy (Tuscany, VT), Scuola della Pizza Italiana (Udine), Capac Politecnico del Commercio (Milan), and  èCucina(Verona).

We help to organise professional training courses across the world with the best pizza chefs, for example with internationally renowned professionals such as Lorenzo Collovigh and Marco Viesi, and world champions Carmelo Oliveri, Gianni Calaon and Federico de Silvestri.

At our headquarters in Caselle di Sommacampagna (Verona), we organise training programmes with the Accademia Pizzaioli and the Scuola Italiana Pizzaioli. Courses last one week and include theory classes and practical exercises using  Zanolli ovens and equipment. Here are just a few of the main activities that take place during the courses: different dough-making and baking techniques, theoretical concepts with internal technicians, and face-to-face lessons with pizza chefs.
